Your catch has been professionally cleaned and properly cared for on the boat so now what to do when you get ready to prepare your catch for the table?
Start with a non- metallic bowl
3-4 tablespoons of kosher or sea salt
Cold water
Fill 3/4 with ice
Soak for 20-30 minutes and pat dry
Marinade or prepare the fish as you would normally
